1 1/4 C Organic Whole Grain Spelt Flour
(Use Organic Whole Grain Buckwheat Flour or Teff Flour for Gluten Free option)
2 Eggs
1/2-3/4 C Milk (can use Hemp or Almond milk)
1 Tbls Organic Coconut Palm Sugar
2 Tbls Organic Coconut Oil or Walnut Oil
1 tsp Baking Powder
pinch of Salt
1 tsp Organic Ground Cardamom
2 tsp Organic Vanilla Extract

*Note* When adding milk to get proper consistency, add a smaller amount first then a little more at a time.

*Optional ingredients: Lucuma powder, Vanilla bean powder, Banana, Blueberries, Hemp Seeds, Sunflower Seeds, Coconut, Cinnamon

Mix dry ingredients, then mix wet into dry making sure there are no lumps. Heat griddle or large frying pan.Use a small amount of Butter or Coconut Oil to grease spot right under pancake. Use a 1/4 cup measure or pour directly from container with a spout. Cook until bubbly and starting to get a bit dry around the edges, then flip and cook until golden.
