3 C Rolled Oats
1/4 C Spelt Flour
1/2 C Brown Sugar or Coconut Palm Sugar
1/2 C Coconut Oil
1 C Sunflower Butter
1/4 tsp Baking Soda
1 Tbls Maple Syrup
1/2 package Chocolate Chips
3/4 C Currants or Raisins
2 Eggs
1/4 C Slivered Almonds;lightly toasted
1/4 C Sliced Almonds;lightly toasted
1 tsp Vanilla
Preheat oven to 350 degrees
In a large bowl, mix sugar, maple syrup and coconut oil, add eggs, vanilla and Baking Soda, mix
Add Sunflower Butter, mix well. Add oats, flour, Chocolate chips, and nuts, Mix very well to make sure there are no dry spots with flour and oats.
Drop a teaspoon full of dough onto a parchment lined sheet pan.
Bake 10-12 minutes
Optional idea: Walnut pieces, Pecan pieces, Sunflower seeds or Hemp seeds
I did not toast my Almonds, but I think it would be better if they were, so if you do not want to toast the almonds leave them raw.
You can also leave out the Spelt flour all together or use Teff or Buckwheat Flour and the cookies will be Gluten free
